Spicy Thai Scallop Salad

Ingredients:



  • 1 1/4 cup of stir fry
  • 1 lbs scallops
  • Cooking spray
  • 2 cloves garlic, chopped
  • 1 cup eggplant, chopped about 1/2 inch cubes
  • 1/2 cup red onion, chopped
  • 1 red pepper, julienned 1 green pepper, julienned
  • 1/2 cup fresh basil, chopped
  • 1 tbsp lemon grass, chopped, or 1 tbsp lemon rind, grated
  • 2 Thai chili peppers or jalapenos, chopped, fresh or frozen
  • 5-6 kaffir leaves, optional
  • 1 tbsp fresh ginger, chopped



Directions:



1. Preheat a wok over medium/high heat coated with cooking spray. Add scallops and cook about 4 minutes stirring constantly.
2. Add garlic, eggplant and red onion. Cook about 5 minutes. Add red pepper through to ginger cook and additional 3 minutes.
3. Serve over rice or as a topping to a dinner sized salad.
