Angeled Deviled Eggs

(Angeled) Deviled Eggs from The Bikini Model Cookbook

Ingredients:

  • 12 eggs, boiled
  • 1 cup 1% cottage cheese
  • 2 green onions, chopped
  • 1 garlic clove, minced
  • 1 tbsp. Dijon
  • Epicure Fresh Ground Pepper to taste
  • ½ tsp. paprika, organic






Directions:



  1. Boil the 12 eggs for 15 minutes. Drain and pour cool water over the eggs. Immediately peel the eggs by cracking and rolling on a hard surface to loosen the shell. Peel. Rinse and set aside. Repeat with all 12 eggs.
  2. Cut each egg in half, pop the yolk into a bowl. Discard 6 of the yolks. Keep the halved egg whites off to the side. Smash the remaining 6 yolks with a fork in a large bowl.
  3. Add the cottage cheese, green onions through to fresh ground pepper. Combine well and mash with a fork to blend well.
  4. Top each half egg with 1 tsp. of the cottage cheese yolk mixture. Sprinkle with paprika. Serve immediately or chilled with fresh veggie sticks.

Man Sized Makes 2 servings: Male Serving Size: 6 full eggs or 12 halves of the deviled eggs
